week two

My mother’s birthday is Friday and I’ve decided to make her a birthday card.

Originally I thought up my kid + cupcakes = photo + Gimp 2  = Birthday card

Obviously, I don’t have that much time.

These are a couple of sad looking pom-poms I made today.

Chocolate (cup)cakes with blueberries. I didn’t make frosting but it’s pretty decent without it.

The blueberries made the indentations which I like.

Sift all these together

2 cups of flour (I used unbleached whole wheat)

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup of cocoa powder

1/2 cup of sugar

1 cup of brown sugar

Add:

1/2 cup mixed margarine and coconut oil (all melted)

1 cup of milk

2 eggs

1 tablespoon of vanilla extract

2 cups of blueberries

Oven 350 degrees Fahrenheit for about 35 minutes.

I didn’t have time to make my mom anything. I’m a bad daughter.  She seemed happy with a kiss on the cheek and telling her happy birthday, though.

This was an unproductive week as I’m in the process of finding a job.

I did manage to make these.

The bottom of the cake separated when I was taking it out of the pan. This cake was a total fail. I added too much liquid, which is something I tend to do when I’m not following a recipe and winging it. I also didn’t add sugar because I thought the pineapple and bananas would give it enough sweetness.

I tend to go by this for the dry ingredients.

2 cups flour

1/4 teaspoon sugar

1/2 baking soda

1/2 baking powder

The liquid is where I messed up as I threw a whole 20 ounce can of pineapple chunks in the blender and got it smooth then added enough milk to make it two cups,along with two eggs and a spoonful of vanilla.

Two cups of blueberries and two ripe bananas were added.

Now these tacos were pretty easy.

Cooked up the bell peppers, warmed up some leftover pork tenderloin.

Warmed up the tortillas in the microwave for a minute. (There were originally six).

Smushed two avocados along with lemon juice and salt and pepper.

Slathered the tortillas with the avocados. Added two pieces of pork and some bell pepper, then sprinkled shredded cheddar.
