week seven

This week started with a birthday cake and ended with a birthday cake. My son’s third birthday was on Monday and was celebrated twice with the same people.

Sunday’s cake was a Carvel. I am not going to pretend I had a hand in making this one as it is store bought by my sister-in-law and brother. I’m not a fan of a cake made almost entirely of ice cream. Neither is my son, who I had to promise blueberries to, to reward him for eating his last bite.

It took three people to make a Boston Cream Pie, his second birthday cake.

I contributed by baking the actual cake part. Yeah, it was the mix for a German Chocolate cake minus the frosting. I made the filling and it looked terrible until the next day. Turned out, my dad made another filling. So, it was filled with the second one with some of the first added to it, then some of the first spread on the outside. I melted a 4 oz bar of bittersweet Ghirardelli chocolate into some whipping cream then added a tablespoon of powdered sugar. I put the glaze on and my niece and my dad decorated it.

I did end up making another dessert.

Tiramisu.

It didn’t come out pretty but it was fairly simple to make,

There was no instant coffee in the house so I boiled water and added coffee grounds then strained the grounds out and dipped the lady fingers in the coffee. I used almost two full packages of ladyfingers.

I didn’t use mascarpone cheese but mixed 16 oz cream cheese, 1/4 cup of sour cream and 1/4 cup of whipping cream together.

I layered the ladyfingers, then a layer of the cream cheese, then repeat a couple more times ending with the cream cheese on top, then a dusting of cocoa powder.
