Slow week is slow
Continuation of this project. The bobbles are coming along nicely.
Had grated carrots and couldn’t decided between Southern biscuits and, well, biscuits/cookies.
Carrot cake bikkies won out, although I would have preferred they were crunchy instead of little puffy bits of goodness. So, I need to alter a few things.
I rarely write things down which is why rarity in posting recipes, but this is the jotted notes.
Three peeled and shredded carrots
Add to that 1/3 cup chopped pecans and add enough raisins to make 1/2 cup.
2 1/2 cups flour
+ 1/4 teaspoon of salt, baking powder, baking soda, nutmeg, and allspice +1/2 teaspoon cinnamon
1 stick butter, melted
1 cup sugar (3/4 raw sugar + 1/4 brown sugar)
1/2 tablespoon vanilla extract
Drop by tablespoons apart two inches even though they don’t spread that much.
Fifteen minutes at 350F/176C
